Start by filling the pot up to 3/4 with water and add a pinch of salt. Put it on high heat and wait to start boiling. When ready add the Rice and cook according to the package instructions.
In the mean time do the following:- Peal and cut the onions in slices- Peal and fine cut the garlic- Cut in half the cherry tomatoes- Strain and wash the canned red kidney beans- Grade the Tomatoes Prepare the sauce. Add Olive oil and heat it up on high heat. When hot enough add the onions and cook for 1-2 mins.
Add the spices. Salt, Pepper, Cumin, Paprika and mix well. Cook for 1 min.
Add the peppers, the garlic and mix.
Add the minced beef and cook for 5-7 minutes.
When the beef has taken a nice brown color add the tomatoes, the tomato juice and mix well and cook for an additional 5 min.
Finally add the red kidney beans and cook for 2-3 minutes.
