Add waster to your pot 3/4 full and a pinch of salt
Wash the potatoes well and cut them in half. When the water is boiling add them in and cook to 3/4 done. Check by poking them with a fork. IF the fork is going easily to half way though or a bit more you are ready.
Set the frying pan on high heat. Strain the potatoes and add them to the frying pan along with some salt, pepper, the rosemary, garlic and olive oil. Mix them every now and then until the are golden.
Prepare the garnishes. Cut in round shape, the tomato and he onion and place them in a plate along with the lettuce to use later. Grade the cheddar cheese.
Use 125 gm of ground beef to form the burgers in a round shape. Use you hands to mold them. Add salt & pepper to taste.
Cook them at medium high heat in the frying pan app. 3 min per side or under no liquids coming out when gently pressed with a spatula. Here you can add the graded cheese if you want it fully melt.IF you don't like your burger medium rare cook for longer. If you have space on the frying pan you can do the next step at the same time. When the burgers are done add the smoked bacon slices and cook to taste. Some like them crispier than others.
In a small frying pan add some olive oil and when hot add the egg(s). use a spoon to splash the hot oil on the yolk until its pink in color and remove for the frying pan. Try not to pick up a lot of the oil.
"Build" the burger: Bun, tomato, onion, lettuce, burger, cheese, bacon, egg, second bun.
Take a BIG bite and enjoy the mess....
